Oh mushrooms how I love you so. These vegan bbq mushroom tacos are so savory and delicious you’ll be coming back for more!
Mushrooms are such a great substitute for a meaty texture without any of the processed mystery ingredients you find in commercial fake meat. They can absorb flavors and hold up to a variety of cooking techniques.
The oyster mushrooms are particularly great when pulled apart to get that pulled pork (see my vegan pulled pork recipe) or pulled chicken texture. They maintain a nice bite while really absorbing the flavor.
If you live in a city with an Asian market you can find organic oyster mushrooms for very cheap. They do sell them at most grocery stores now they can just be a little pricier especially if you are making these for a group.

The vegan bbq mushroom tacos recipe video at the top shows the portions for a single meal (I ate these right after I made them, haha). The instructions below are for 2 people and it can easily be scaled.
This BBQ sauce can also be modified in a variety of ways to make it more sweet, spicy, etc.
You can also add other veggies into the mix like onions, garlic and bell peppers, but you don’t really need it.
Lastly, do NOT skimp on the tortillas. I prefer high quality corn tortillas and will sometimes get the corn/wheat blend that you can find at most grocery stores now. A great tortilla is crucial to a great taco. They also need to be warm when you serve your vegan bbq mushroom tacos. I prefer to heat it up directly on the flame from the gas stove which adds a nice charred look and flavor to the final dish.
