Got a ton of parsley and don’t know what to do with it? This parsley salad is perfect to put on a sandwich, a wrap, with pita, with crackers or just on it’s own. It’s super fresh tasting and will last in your fridge for about 5 days.
You can also adjust the quantities to your liking if you want more parsley or avocado for example. A little chopped onion can be a nice addition as well, I just wasn’t feeling it for this.
Chopped Parsley Salad (Grain Free Tabouleh) with Avocado
- 1 cup parsley fresh, chopped fine
- 1 cup cherry tomatoes sliced
- 1 avocado cubed
- 3 medium cucumbers seeded and diced small
- 1/4 cup extra virgin olive oil
- 1/4 cup lemon juice
- salt and pepper to taste
Add all the ingredients in a large mixing bowl. Combine well. Add salt and pepper to taste and refrigerate for at least an hour before serving.
