I’ve been obsessed with making my own salad dressing ever since I got an immersion blender (highly recommended). It’s super simple, tastes delicious, you have more control health-wise and it’s cheaper. Any other benefits you need? If you don’t have the immersion blender, you can also mix it in a regular blender or a food processor.
This dressing was born based on ingredients that I had in the house and I needed to use up my basil before it went bad. In the next couple weeks, I’ll be posting a salad recipe that utilizes this. The avocado was actually a last minute decision to add a desired thickness and it works wonders.
You might be thinking that you could just use olive oil instead of walnut oil and you would be correct, but you won’t get the same flavor. The light nuttiness really adds a lot. If you are allergic to nuts though, high quality olive oil will still produce a tasty dressing.
What do you think? What kind of salad did you put it on? Let me know in the comments below!
Citrus Basil Avocado Salad Dressing with Walnut Oil
- 1 tbsp basil fresh
- 2 tbsp lemon juice fresh
- 2 tbsp orange juice
- 2 tbsp walnut oil
- 2 tbsp canola oil
- 1 tbsp shallots minced
- 1/4 avocado large
- fresh ground black pepper
Combine all ingredients in a blender, food processor or a measuring cup if you are using an immersion blender (my favorite). Blend until smooth!
