This dressing is bright and creamy. It goes great with any southwest salad, as a sandwich spread, or taco topping. You can add a little more water if you like it thinner, but don’t add any more than a tablespoon at a time so you can taste test as you go.

Creamy Cilantro Lime Salad Dressing
- 1/2 avocado ripe
- 1 tbsp lime juice fresh
- 4 olive oil
- 2 filtered water
- 1/4 cup cilantro fresh, packed
- 1 medium jalapeno pepper seeded and chopped
- salt and pepper to taste
Combine all ingredients in a measuring cup and blend with an immersion blender until you get an even consistency. Taste and add salt and pepper as needed.
