If you follow me on Instagram, you know I’m a huge fan of the salad in a jar concept for prepping salad ahead of time and making it easily portable. This simple salad is refreshing and pairs really well with the citrus basil avocado salad dressing I posted up a couple weeks ago.
This is a single serving salad as I am just one dude, but you can easily increase the ingredient amounts to feed more people. This would probably be good for two if you were eating it as a side salad.
I used romaine for the greens, but it would also be good with spinach or butter lettuce.
What do you think? Did you have it with a different dressing? Add or subtract something?
Let me know in the comments!
Heirloom Tomato and Fennel Salad in a Jar
- 2 tbsp dressing citrus basil avocado
- 1/4 cup carrot multi colored, sliced
- 1 cup heirloom tomatoes multi colored, chopped
- 1/2 cup fennel sliced thin, about 1/2 a large bulb
- 1 cup romaine lettuce torn
Place dressing in the bottom of a jar and add all the ingredients ending with the lettuce to make sure it's dry until you are ready to eat! When ready, shake, put it into a bowl and devour.
