Okay, maybe not forever, but for a while. Carrots are one of those veggies that kept going bad in my fridge time and time again before I got a chance to eat them. When they go bad they get all limp and it’s a very sad and unappetizing scenario. Once I discovered this trick, I’ve never had an issue and they stay crisp for weeks.
First, make sure you cut off the carrot greens. Then all you have to do is submerge the carrots in water in a covered container and they will retain their freshness. I prefer to do it in a jar because I am a compulsive container saver and I have a bunch of them. If you have bigger carrots, you can cut them in half or thirds to make them fit.
If you end up keeping them for an extended period of time, make sure to change out the water on occasion :).
