This salad is super easy to make, delicious, and healthy. You can add additional lemon juice to taste if you like. You could also experiment using lime juice and other herbs like basil or cilantro. It’s best if you store it in the fridge for at least an hour before serving for the flavors to blend together.
Quinoa Salad with Corn and Cherry Tomatoes
- 2 cups corn kernels fresh
- 1.5 cups grape tomatoes sliced
- 1 small bunch chives chopped, about 15 stems
- 2 cups quinoa cooked
- 1 tbsp lemon juice fresh
- 1 tbsp olive oil
- salt and pepper to taste
Heat up the butter spread in a pan over medium heat. Saute the corn kernels for 3-5 minutes and put into a mixing bowl.
Add in the grape tomatoes, chives, and olive oil. Stir to combine. Then mix in the quinoa and lemon juice. Add salt and pepper to taste.
