How great is salsa? I mean it really is the best condiment in the world.
Salsa is a critical staple in our house. We’ve always got 2 or 3 jars of salsa in our fridge at any given time with a mix of flavors and heat levels.
It is also REALLY easy to make salsa at home with a bunch of fresh ingredients from your grocery store, farmers market or produce box. At its essence its peppers and tomatoes with salt and lime. Vary the tomatoes, peppers, add spices, herbs, etc. and you have a wide world of options.
I’ve partnered with California Olive Ranch to create this yummy salsa verde recipe perfect for dipping chips, marinating grilled veggies or as a sauce for enchiladas.
Roasted salsas have a special place in my heart and this recipe is no different. The roasting of veggies brings out the richness of their flavor and combining them all into the salsa brings a smile to my face.
In addition to using salsa as a condiment for Mexican food, I also frequently use it as a marinade for tofu, tempeh, veggies, jackfruit and other vegan mains. It’s a great way to easily add flavor to a dish.
California Olive Ranch EVOO really takes this salsa recipe to the next level. The flavor infused in roasting the veggies and then again to add that wonderful creamy texture by blending it in the final step.
