Are you looking for the most refreshing summer dish that’s ever hit your lips? Well, you found it. This is so easy and incredibly refreshing. You’re going to want to dig in right away, but trust me that it is better to let it sit for at least an hour in your fridge once you make it.
For one, a big part of the refreshing aspect is it being cold. The other main reason is giving it time to chill lets the flavors combine and really get that lime, cilantro love all through the ceviche.
I’ll eat this over a bowl of mixed greens as a salad, with tortilla chips, pita chips or anything else I can use to scoop it out of the bowl. Sometimes it’s just a spoon. 😉
