Chopped Parsley Salad (Grain Free Tabouleh) with Avocado

  • 1 cup parsley fresh, chopped fine
  • 1 cup cherry tomatoes sliced
  • 1 avocado cubed
  • 3 medium cucumbers seeded and diced small
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • salt and pepper to taste


  1. Add all the ingredients in a large mixing bowl. Combine well. Add salt and pepper to taste and refrigerate for at least an hour before serving.
